Basil Chicken Aglio Olio

                                                       

Ingredients


Pasta - 200 gm. (Fusilli or Linguine)
Minced Chicken - 200 gm.
4 tbsp. olive oil
10 garlic cloves
1 onion (medium sized) - finely chopped
1 tbsp. dried basil leaves
1/2 tsp. dried mixed herbs
1 tsp. dried red chili flakes
Parsley/coriander as required
Salt as required
Grated cheese as required
crushed black Pepper (Optional)

Preparation:


1. Peel the garlic/onion and chop finely
2. Wash the chicken
3. Marinate the chicken with salt (and 1/2 a spoon of dried mixed herbs for extra flavor)

Method:


1.Cook pasta as per the instruction given in the pack
*I usually add 1/2 a spoon of oil and salt while cooking the pasta
2.In a frying pan, heat up olive oil, add onion and garlic, fry till light brown
3.Add the chicken pieces and sauté for 2 min
 Leave for 10 minutes, sauté occasionally
4.Drain the cooked pasta and toss it into the frying pan
5.Add basil leaves, chilly flakes and toss altogether
6.Add some grated cheese (parmesan)
7.Garnish with parsley and season with pepper if required and Serve hot!


**Vegetarians can replace chicken with mushroom or just a plain Aglio Olio would do without any meat.

** Fresh basil leaves can be used if available
